Ingredients
- Zucchini, 4 medium-sized
- Onion, 1 small
- Vegetable broth, about 500 ml
- Extra virgin olive oil, as needed
- Salt, as needed
- Pepper, as needed
- Cooking cream (optional), to make the velouté even creamier
- Chives or fresh mint, to garnish
Preparation
- Wash the zucchini and slice them into rounds, not too thick.
- Finely chop the onion and let it wilt in a pot with a drizzle of extra virgin olive oil over medium-low heat until it becomes transparent.
- Add the zucchini rounds to the pot and let them flavor for a few minutes.
- Pour the vegetable broth into the pot, enough to cover the vegetables, and bring to a boil.
- Lower the heat, cover the pot, and let cook for about 20 minutes, or until the zucchini are tender.
- Use an immersion blender to blend the vegetables into a smooth and homogenous cream. If the velouté is too thick, you can add a bit more broth.
- Taste and adjust the seasoning with salt and pepper according to your taste.
- If desired, you can add a touch of cooking cream to make the velouté even richer and more velvety.
- Serve hot, garnishing each plate with a drizzle of extra virgin olive oil and a bit of chopped chives or fresh mint.
