Saffron Zucchini Terrine

The saffron zucchini terrine is an elegant and flavorful dish that can be served as an appetizer or as a side. Here’s how to prepare it:

Ingredients

  • 1 kg of zucchini
  • 3 eggs
  • 100 g of grated cheese (Parmesan or pecorino)
  • 200 ml of cream
  • 1 sachet of powdered saffron
  • Salt and pepper to taste
  • Butter for greasing the terrine
  • Breadcrumbs for dusting the terrine

Preparation

  1. Start by washing the zucchini, then slice them into thin slices. You can decide whether to peel them or not, depending on your preference and the freshness of the zucchini.

  2. Steam or pan-fry the zucchini with a little bit of oil and salt until they are soft. Then let them cool down.

  3. In a large bowl, beat the eggs with the grated cheese, add the cream and season the mixture with salt, pepper, and the sachet of saffron previously dissolved in a spoonful of hot water.

  4. Add the cooled zucchini to the egg mixture and mix gently to obtain an even batter.

  5. Take a baking terrine and grease it with butter, then dust with breadcrumbs. Pour in the zucchini mixture and level the surface.

  6. Bake in a preheated oven at 180 °C for about 40-45 minutes or until the terrine is golden and firm to the touch. Let it cool down slightly before unmolding.

  7. Serve the saffron zucchini terrine cold or at room temperature, cutting it into slices.

Curiosity

The saffron zucchini terrine can be enriched with the addition of other ingredients such as chives, mint, or basil for a touch of extra freshness. Furthermore, for a more rustic version, you can add stale bread soaked in milk to the mixture, which will provide a thicker consistency to the dish. The aroma of saffron, with its slightly bitter taste and intense yellow color, will offer a unique sensory experience to those who taste this delicious terrine.
