Cherry Meringue Ice Cream
17/11/2023Cherry meringue ice cream is an extremely delicious dessert and relatively easy to prepare. It consists of a crunchy layer of meringue combined with the creaminess of the ice cream and the intense flavor of cherries. Here’s how to make it:
Ingredients
- 4 large meringues (you can buy them ready-made or make them at home)
- 1 liter of cream (or vanilla) ice cream
- 300 grams of syrupy cherries (or berries if you prefer)
- Cherries for decoration
- Cherry syrup
Preparation
- If you make meringues at home, beat egg whites with a pinch of salt until they are foamy, then gradually add the icing sugar until the desired consistency is reached. Spread the meringues on a baking tray lined with parchment paper and bake in the oven at 100°C for about 1-2 hours, until crispy.
- Once the meringues are ready, take a cake ice cream container (or a springform pan) and make a layer with the crumbled meringue on the bottom.
- Over the meringue, pour a layer of softened cream ice cream.
- Evenly distribute the syrupy cherries (keeping some aside for decoration) over the ice cream and if desired, add some syrup to enhance the flavor.
- Add another layer of crumbled meringue and then cover with another layer of cream ice cream.
- Put the meringue in the freezer for at least 2-3 hours to set.
- Before serving, decorate with the cherries set aside and if you like, drizzle with some cherry syrup.
A tip: to prevent the ice cream from melting while assembling the meringue, work quickly and keep the ice cream in the freezer until the moment of use.
