Zucchini Rolls

Zucchini rolls are a versatile and tasty dish that can be customized in many ways. Here is a simple recipe:

Ingredients

  • 2-3 large zucchinis
  • 200 g of ricotta cheese
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 egg (optional)
  • Aromatic herbs to taste (basil, mint, or parsley)
  • Thin slices of cooked or raw ham (optional)
  • Tomato sauce (optional, for dressing)

Preparation

  1. Wash the zucchinis and cut them lengthwise into thin slices, using a mandoline or a sharp knife.

  2. Grill the zucchini slices on a hot grill, lightly brushing them with olive oil, until they are soft and have the characteristic grilled stripes. Set aside to cool.

  3. In a bowl, mix ricotta with Parmesan, salt and pepper to taste. You can add an egg for a firmer filling and chopped aromatic herbs.

  4. Lay out the zucchini slices on a work surface and place a quantity of ricotta filling in the center of each.

  5. If you like, add a slice of cooked or raw ham on top of the ricotta before rolling.

  6. Roll the zucchini slices around the filling, forming rolls.

  7. If desired, you can finish the rolls with a brief baking in the oven: place them in a baking dish with some oil or tomato sauce on the bottom, cook in a preheated oven at 180°C for about 15-20 minutes.

Zucchini rolls can be served as a light appetizer or side dish and are perfect for a buffet or a summer aperitif. Enjoy your meal!
