Zucchini Roll

The zucchini roll is a fresh and light dish, perfect especially for the summer months. Here’s how to prepare it:

Ingredients

  • 4 large zucchinis
  • 250 g of ricotta
  • 100 g of cooked ham
  • 50 g of grated Parmesan cheese
  • Chives
  • Salt and pepper
  • Extra virgin olive oil

Preparation

  1. Start by washing the zucchinis and cutting them into thin slices lengthways. You can use a mandoline or a vegetable peeler to get uniform slices.

  2. Heat a grill and grill the zucchini slices until they are lightly browned on both sides. Then let them cool.

  3. In the meantime, prepare the filling by mixing in a bowl the ricotta with the grated Parmesan, chopped chives, salt, and pepper. If you have specific tastes, you can add other herbs as you like.

  4. Spread the zucchini slices on a work surface and place a slice of cooked ham on each, then spread a layer of ricotta filling on top.

  5. Gently roll the zucchinis starting from the narrower end to obtain compact rolls.

  6. If necessary, you can secure the rolls with a toothpick to prevent them from opening.

  7. Arrange the zucchini rolls on a serving platter and, if you wish, dress with a drizzle of extra virgin olive oil before serving.

Optional: You can enrich the filling with other ingredients such as chopped spinach, speck instead of cooked ham, or replace the Parmesan with another grated cheese of your liking.
