Preparation

  1. Start by washing the zucchinis and cutting them into rounds or cubes, according to your preference.
  2. In a pan, sauté a clove of garlic in extra virgin olive oil and then add the zucchinis to cook them until they are slightly golden. Season with salt and pepper to taste. Once ready, set them aside to cool.
  3. In a bowl, beat the eggs with the heavy cream, add the ricotta and the grated Parmesan cheese, then mix well to obtain a homogeneous mixture. Season with salt, pepper, and nutmeg to taste.
  4. Roll out the brisée pastry in a quiche tin previously greased or lined with parchment paper. Prick the bottom with a fork to prevent it from puffing up during cooking.
  5. Distribute the zucchinis over the pastry base, then pour the egg and cheese mixture over them.
  6. Bake in a preheated oven at 180 °C (356 °F) for about 30-40 minutes, or until the surface of the quiche turns golden and the brisée pastry is well cooked.
  7. Once ready, let the zucchini quiche cool down a bit before serving. If you wish, you can add fresh basil or mint leaves to give an additional aromatic touch.
