Zucchini Frittatas

Ingredients
- 2 medium zucchinis
- 2 eggs
- 40 g of grated cheese (parmesan or pecorino, according to taste)
- Salt and pepper to taste
- Aromatic herbs as desired (for example, mint or basil)
- Oil for frying
Preparation
- Start by washing the zucchinis and grating them with a coarse grater. Place them in a colander, add a little salt and let them lose their water of vegetation for about 20 minutes, then squeeze them well.
- Beat the eggs in a bowl and add the grated cheese, a pinch of salt (be careful not to overdo it because there will already be salt in the zucchinis), pepper and finely chopped aromatic herbs.
- Add the squeezed zucchinis to the egg mixture and mix until you get a homogeneous batter.
- Heat a bit of oil in a non-stick frying pan. With the help of a spoon, form small frittatas by pouring the mixture into the pan and flattening it slightly to shape it into a small frittata.
- Cook the frittatas on both sides until they are golden and crispy.
- Drain them from the excess oil on paper towels and serve them hot or warm.
Zucchini frittatas can be customized in many ways: for example, you can add chopped spring onion to the batter or enrich them with crumbled feta or diced cooked ham for a richer variant.
