Zucchini Frittatas

Zucchini frittatas are a simple and delicious dish, perfect for an appetizer or a light lunch. Here’s the recipe:

Ingredients

  • 2 medium zucchinis
  • 2 eggs
  • 40 g of grated cheese (parmesan or pecorino, according to taste)
  • Salt and pepper to taste
  • Aromatic herbs as desired (for example, mint or basil)
  • Oil for frying

Preparation

  1. Start by washing the zucchinis and grating them with a coarse grater. Place them in a colander, add a little salt and let them lose their water of vegetation for about 20 minutes, then squeeze them well.
  2. Beat the eggs in a bowl and add the grated cheese, a pinch of salt (be careful not to overdo it because there will already be salt in the zucchinis), pepper and finely chopped aromatic herbs.
  3. Add the squeezed zucchinis to the egg mixture and mix until you get a homogeneous batter.
  4. Heat a bit of oil in a non-stick frying pan. With the help of a spoon, form small frittatas by pouring the mixture into the pan and flattening it slightly to shape it into a small frittata.
  5. Cook the frittatas on both sides until they are golden and crispy.
  6. Drain them from the excess oil on paper towels and serve them hot or warm.

Zucchini frittatas can be customized in many ways: for example, you can add chopped spring onion to the batter or enrich them with crumbled feta or diced cooked ham for a richer variant.
