Ingredients
- Zucchini, 2-3 medium
- Eggs, 6
- Grated Parmesan, 50 g (optional)
- Onion, 1 small (optional)
- Salt, to taste
- Pepper, to taste
- Olive oil, 2 tablespoons
Preparation
- Start by washing and cutting the zucchini into slices or cubes, according to your preference.
- If you decide to use an onion, slice it finely.
- Heat olive oil in a non-stick pan and add the onion, sautéing until it becomes translucent.
- Add the chopped zucchini and cook until they are tender and slightly golden.
- In a bowl, beat the eggs with salt and pepper, and if you like, add the grated Parmesan.
- Pour the egg mixture over the zucchini in the pan. Cook on medium-low heat, covering with a lid until the bottom has browned and the top begins to set.
- With the help of a plate, flip the frittata and cook it on the other side until browned. (If you prefer, you can also finish cooking under the oven broiler).
- Serve hot or at room temperature.
