Ingredients

  • Zucchini, 2-3 medium
  • Eggs, 6
  • Grated Parmesan, 50 g (optional)
  • Onion, 1 small (optional)

  • Pepper, to taste
  • Olive oil, 2 tablespoons

Preparation

  1. Start by washing and cutting the zucchini into slices or cubes, according to your preference.
  2. If you decide to use an onion, slice it finely.
  3. Heat olive oil in a non-stick pan and add the onion, sautéing until it becomes translucent.
  4. Add the chopped zucchini and cook until they are tender and slightly golden.
  5. In a bowl, beat the eggs with salt and pepper, and if you like, add the grated Parmesan.
  6. Pour the egg mixture over the zucchini in the pan. Cook on medium-low heat, covering with a lid until the bottom has browned and the top begins to set.
  7. With the help of a plate, flip the frittata and cook it on the other side until browned. (If you prefer, you can also finish cooking under the oven broiler).
  8. Serve hot or at room temperature.
