Zucchini Flower Fritters

Zucchini flower fritters are a light and tasty appetizer, typical of Italian cuisine. Here is the recipe to prepare them.

Ingredients

  • 12 zucchini flowers
  • 120 g of flour
  • 200 ml of very cold sparkling water
  • 1 egg
  • Salt to taste
  • Oil for frying

Preparation

  1. Gently clean the zucchini flowers, removing the internal pistil and any external residues, without breaking them.
  2. Prepare the batter by mixing the flour with a pinch of salt. Add the egg and the sparkling water little by little, working with a whisk to avoid lumps. The batter should be smooth and fairly fluid.
  3. Gently dip the zucchini flowers into the batter, making sure to cover them completely.
  4. Heat plenty of oil in a pan and, when it has reached the right temperature (about 170-180 °C), fry the battered zucchini flowers until they become golden and crispy.
  5. Drain them on paper towels to remove excess oil and serve them hot, perhaps with a pinch of salt on top.

Curiosity

Zucchini flowers are particularly delicate and should preferably be consumed on the same day of purchase. These fritters are a classic of Roman cuisine but loved throughout Italy. For an even tastier variant, you can also add a piece of mozzarella and an anchovy to the filling before dipping them in the batter and frying them.
