Zucchini Cutlets
17/11/2023Here is the recipe to prepare delicious Italian-style zucchini cutlets.
Ingredients
- 2 medium zucchinis
- 100 g of breadcrumbs
- 50 g of grated Parmesan cheese
- 2 eggs
- Salt and pepper to taste
- Extra virgin olive oil for frying (or alternatively seed oil for a more traditional frying)
Preparation

Wash the zucchinis and cut them into slices lengthwise, about 3-4 mm thick. It’s not necessary to peel them, as the skin will add a pleasant crispiness.

Beat the eggs in a deep plate with a pinch of salt and pepper.

In another plate, mix the breadcrumbs with the grated Parmesan cheese.

Take the zucchini slices and first dip them in the beaten eggs, making sure to cover both sides evenly.

Then coat the zucchini slices in the breadcrumb and cheese mixture, pressing lightly to ensure the coating sticks well.

In a large frying pan, heat plenty of extra virgin olive oil or seed oil. Once the oil has reached the right temperature (a piece of bread should sizzle when dipped in the oil), fry the breaded zucchinis until they are golden brown on both sides.

Once cooked, transfer the zucchini cutlets onto a plate lined with paper towels to remove excess oil.

Serve hot, perhaps with a sprinkle of lemon juice or alongside a fresh mixed salad.
