Zucchini Crepes
17/11/2023Drawing on Italian tradition, I will suggest how to prepare delicious zucchini crepes with a tasty filling that pairs well with the flavors of our country.
Ingredients for the crepes:
- 125 g of flour
- 250 ml of milk
- 2 eggs
- A pinch of salt
- 20 g of melted butter
Ingredients for the filling:
- 2 medium zucchinis
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- 200 g of ricotta
- 50 g of grated Parmesan cheese
- Nutmeg to taste
- Butter for greasing the baking dish
- 100 g of mozzarella (optional, for those who want a stretchier filling)
Preparation
- Start by preparing the crepes. In a large bowl, beat the eggs with a pinch of salt. Add the sifted flour and mix to avoid lumps.
- Gradually pour in the milk and continue to stir until the mixture is smooth. Finally, incorporate the melted butter. Let the batter rest for about 30 minutes.
- In the meantime, wash and dice the zucchinis. In a non-stick pan, fry the garlic in the extra virgin olive oil and add the zucchinis. Cook them until they are soft but still crisp. Season with salt and pepper and let cool.
- In a bowl, mix the ricotta with the Parmesan, add a pinch of nutmeg, and adjust the seasoning with salt and pepper. Mix in the cooked zucchinis.
- Cook the crepes in a lightly buttered non-stick pan. Pour a ladleful of batter and rotate the pan to evenly distribute the mixture. When the edges start to lift, flip it and cook for another 30 seconds or so. Repeat the operation until all the batter is used up.
- Take each crepe, fill it with the ricotta and zucchini mixture, and roll them up. You can also add pieces of mozzarella in the center for a stretchier effect.
- Arrange the filled crepes in a baking dish previously greased with butter.
- (Optional) You can finish by sprinkling with more Parmesan and small pats of butter.
- Bake in a preheated oven at 180 °C for about 20 minutes or until golden brown.
