Zucchini Casserole

Here’s a simple and tasty recipe for a zucchini casserole:

Ingredients

  • 4 medium zucchinis
  • 200 g of ricotta cheese
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • 150 g of smoked provola (or mozzarella)
  • 200 ml of béchamel sauce
  • Salt and pepper to taste
  • Extra virgin olive oil as needed
  • Breadcrumbs as needed

Preparation

  1. Wash the zucchinis and slice them into thin rounds or strips. If you prefer, you can slightly grill them to enhance the flavor.
  2. In a bowl, mix the ricotta with the eggs, grated Parmesan, salt, and pepper until you get a smooth mixture.
  3. Cut the smoked provola into cubes.
  4. In a baking dish, grease the bottom with a drizzle of oil and sprinkle with breadcrumbs.
  5. Arrange a layer of zucchini on the bottom of the dish, cover with part of the ricotta mixture and some provola cubes.
  6. Continue with a layer of béchamel sauce.
  7. Alternate the layers until all the ingredients are used up, making sure to finish with a layer of béchamel and a sprinkle of Parmesan.
  8. Bake in a preheated oven at 180 °C (355 °F) for about 30-40 minutes, until the casserole is golden and the surface is well gratinated.
  9. Let it rest for a few minutes before serving.
