Zucchini Casserole

Ingredients
- 4 medium zucchinis
- 200 g of ricotta cheese
- 100 g of grated Parmesan cheese
- 2 eggs
- 150 g of smoked provola (or mozzarella)
- 200 ml of béchamel sauce
- Salt and pepper to taste
- Extra virgin olive oil as needed
- Breadcrumbs as needed
Preparation
- Wash the zucchinis and slice them into thin rounds or strips. If you prefer, you can slightly grill them to enhance the flavor.
- In a bowl, mix the ricotta with the eggs, grated Parmesan, salt, and pepper until you get a smooth mixture.
- Cut the smoked provola into cubes.
- In a baking dish, grease the bottom with a drizzle of oil and sprinkle with breadcrumbs.
- Arrange a layer of zucchini on the bottom of the dish, cover with part of the ricotta mixture and some provola cubes.
- Continue with a layer of béchamel sauce.
- Alternate the layers until all the ingredients are used up, making sure to finish with a layer of béchamel and a sprinkle of Parmesan.
- Bake in a preheated oven at 180 °C (355 °F) for about 30-40 minutes, until the casserole is golden and the surface is well gratinated.
- Let it rest for a few minutes before serving.
