Zucchini Burgers
17/11/2023Zucchini burgers are an excellent vegetarian alternative to classic meat burgers. Here’s how you can prepare them:
Ingredients
- 2 medium zucchini
- 1 egg (or egg substitute for a vegan version)
- 50 g of breadcrumbs
- 30 g of grated cheese (Parmesan or pecorino, or a vegan substitute)
- Salt and pepper to taste
- Aromatic herbs as desired (basil, mint, parsley)
- 1 clove of garlic (optional)
- Olive oil for cooking
Preparation
- Wash the zucchini and grate them with a cheese grater with large holes.
- Place the grated zucchini in a colander, sprinkle with some salt and let it rest for about 15 minutes. This will help remove excess liquid.
- Squeeze the zucchini well to remove as much water as possible.
- In a large bowl, combine the drained zucchini with the egg, breadcrumbs, grated cheese, salt and pepper to taste, and finely chopped aromatic herbs. If desired, also add a finely chopped clove of garlic.
- Mix the mixture well and, if it is too moist, add more breadcrumbs until you reach a moldable consistency.
- Shape the mixture into burgers, using your hands or a pastry ring.
- In a non-stick pan, heat a little olive oil and cook the zucchini burgers for about 4-5 minutes per side, until they turn golden brown and crispy.
- Once ready, you can serve the zucchini burgers however you prefer: on a bed of salad, in a bun with tomato, lettuce, and sauces of your choice, or as a main course accompanied by various side dishes.
