Zucchini and Shrimp Lasagna

Zucchini and shrimp lasagna is a light and tasty dish, perfect for those who love the delicate flavors of the sea combined with the freshness of vegetables. Here is the recipe to prepare this delicious dish.

Ingredients

  • 250 g of lasagna noodles (fresh or dry that require pre-cooking)
  • 300 g of shelled shrimp
  • 400 g of zucchini
  • 200 ml of cooking cream
  • 200 g of béchamel sauce
  • 100 g of grated Parmesan cheese
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper
  • Chopped parsley (optional for garnishing)

Preparation

  1. If you are using dry lasagna noodles that require pre-cooking, start by bringing a large pot of salted water to a boil and cook them according to the package instructions. Then drain them and lay them aside on a clean cloth to remove excess water.

  2. In the meantime, wash the zucchinis and cut them into thin slices or, if you prefer, into sticks. In a pan, heat a drizzle of extra virgin olive oil with a peeled clove of garlic and sauté the zucchinis until they become slightly golden. Add the shrimp and cook for a few minutes until they turn pink. Season with salt and pepper. You can also add a bit of chopped parsley if you’d like.

  3. Prepare the béchamel sauce, if you haven’t already. In a separate saucepan, heat the cooking cream without bringing it to a boil, then mix it into the béchamel sauce, stirring well to obtain a smooth cream.

  4. Take a baking dish and grease the bottom with a little oil. Arrange a layer of lasagna noodles, then spread a part of the zucchini and shrimp mixture, a bit of the béchamel and cream sauce, and sprinkle with grated Parmesan cheese.

  5. Repeat the layers to use up all the ingredients, finishing with a layer of lasagna noodles and the remaining béchamel and cream sauce. Dust the final surface generously with grated Parmesan cheese.

  6. Bake in a preheated oven at 180 °C (approximately 356 °F) for about 30 minutes, or until the surface is golden and crispy.

  7. Let the lasagna rest for a few minutes before cutting and serving. If desired, you can garnish with more chopped parsley.
