Zucchini and Sausage Rolls

Zucchini and sausage rolls are a flavorful dish that is quite simple to prepare. These are thin slices of zucchini wrapped around a succulent core of sausage. Here’s how to proceed.

Ingredients

  • 2 large zucchinis
  • 200 g of pork sausage
  • 1 clove of garlic
  • 50 g of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • Extra virgin olive oil as needed
  • White wine (for deglazing)
  • Some fresh basil leaves for garnish (optional)

Preparation

  1. Wash the zucchinis and cut them into thin longitudinal slices, using a mandolin or a sharp knife.
  2. Heat a grill pan or a normal non-stick pan and grill the zucchini slices on both sides until they are soft and slightly golden. Then, set them aside on a plate.
  3. Break the sausage into the pan used before, adding a drizzle of oil and the crushed garlic clove. Let it brown until fully cooked, crumbling it with a fork.
  4. Once the sausage is cooked, add a splash of white wine and let it evaporate. Remove the garlic and turn off the heat.
  5. On each zucchini slice, lay down some cooked sausage and sprinkle with some grated cheese. Season with a pinch of salt and pepper.
  6. Roll the zucchini slices around the sausage and cheese filling, securing them with a toothpick.
  7. Arrange the rolls in a slightly oiled baking dish, and if desired, sprinkle with more grated cheese.
  8. Bake in a preheated oven at 180 °C for about 15-20 minutes or until the cheese on top of the rolls starts to brown.
  9. Serve hot, garnished with fresh basil leaves if desired.

These rolls can be served as an appetizer or as a main course accompanied by a fresh salad or some crunchy bread.
