Stuffed Meatloaf with Zucchini and Provola Cheese

Ingredients

  • 500 g of ground meat (mixed veal and pork)
  • 2 medium zucchini
  • 200 g of smoked provola cheese
  • 1 egg
  • 50 g of breadcrumbs
  • 50 g of grated Parmesan cheese
  • Chopped parsley, to taste
  • Salt and pepper, to taste
  • Extra virgin olive oil, as needed
  • Garlic, 1 clove (optional)
  • 100 ml of white wine (for cooking)

Preparation

  1. Start by grating the zucchini after washing them, and let them drain in a colander with a pinch of salt.
  2. In a large bowl, combine the ground meat, egg, breadcrumbs, Parmesan cheese, chopped parsley, salt, and pepper. If you like, you can also add a chopped garlic clove. Mix all the ingredients well until the mixture is homogeneous.
  3. Squeeze the grated zucchini to remove excess water and incorporate them into the meat mixture.
  4. Spread the meat mixture onto a sheet of baking paper, forming a rectangle about 1 cm thick.
  5. Cut the smoked provola cheese into slices and place them on the meat mixture, leaving a border free around the edges so you can roll the meatloaf without the filling coming out.
  6. Using the baking paper, roll the meatloaf onto itself, sealing the ends well.
  7. Transfer the meatloaf to a baking dish with a drizzle of olive oil on the bottom. Pour the white wine around the meatloaf and cover the dish with aluminum foil.
  8. Cook in a preheated oven at 180 °C for about 40-50 minutes. Remove the foil in the last 10 minutes to brown it.
  9. Once cooked, let the meatloaf rest for a few minutes before slicing.
