Zucchini and Potato Burgers
17/11/2023Zucchini and potato burgers are a delicious vegetarian alternative that’s simple to prepare. Here’s the recipe for you:
Ingredients
- 2 medium zucchinis
- 2 large potatoes
- 1 egg (you can omit this for a vegan version and replace it with an alternative binder like breadcrumbs or flour)
- 1 clove of garlic
- Salt and pepper to taste
- Aromatic herbs to taste (for example parsley or basil)
- Enough breadcrumbs
- Grated cheese (optional, or for a vegan version you can use a grated vegan cheese)
- Extra virgin olive oil
Preparation
- Start by grating the zucchinis and potatoes after washing and peeling them (the potatoes).
- Place the grated zucchini in a colander, sprinkle some salt over them and let them rest for about 10-15 minutes so they can lose the excess water. Then squeeze them well with your hands.
- Boil or steam the grated potatoes until they become soft.
- In a large bowl, combine the zucchini, potatoes, egg (or substitute), grated cheese (if using), finely chopped garlic, aromatic herbs, salt, and pepper.
- Add the breadcrumbs a little at a time until you have a moldable mixture.
- Shape the mixture into burgers and coat them in breadcrumbs to create a crispy outer crust.
- Heat a drizzle of olive oil in a frying pan and cook the burgers on both sides until golden.
- Serve hot, perhaps accompanied by a yogurt sauce or a fresh salad.
Trivia
The zucchini and potato burgers can be customized in many ways. For example, you can add spices like curry or paprika to the mix to give a more flavorful and exotic touch. Moreover, they can be perfectly baked in the oven for an even lighter version, about 20 minutes at 200°C (392°F), turning them halfway through cooking.
