- 200 g of dried lentils (or about 400 g if pre-cooked)
- 1 carrot, finely chopped
- 1 onion, finely chopped
- 1 stalk of celery, finely chopped
- 2 cloves of garlic, chopped
- 400 g of tomato puree or peeled tomatoes
- 1 bay leaf
- 1 sprig of rosemary (optional)
- 1 glass of red wine (optional)
- Extra virgin olive oil
- Salt and pepper to taste
Ingredients for the Pasta:
- 400 g of ziti or other long pasta
Preparation
-
If using dried lentils, soak them in water for at least 8 hours, then drain and cook them in fresh water for about 20-30 minutes or until they are soft.
-
Heat extra virgin olive oil in a large pot. Add the onion, carrot, celery, and garlic, and sauté until they soften.
-
Add the cooked lentils to the pot along with the bay leaf and rosemary. Pour in the red wine, if using, and let the alcohol evaporate before adding the tomatoes.
-
Bring to a boil, then lower the heat and let the ragu simmer for at least 30-40 minutes, until the sauce thickens. Season with salt and pepper.
-
Meanwhile, cook the ziti in plenty of salted water following the package instructions.
-
Drain the pasta and add it to the lentil ragu in the pot, mixing well to flavor the pasta.
-
Serve the ziti with a sprinkle of grated Parmesan cheese or nutritional yeast for a vegan version.
Ziti with Lentil Ragu is a hearty dish rich in proteins, great for those looking for a vegetarian alternative without giving up the pleasure of a good ragu. Enjoy your meal!
