Ziti with Lentil Ragu

Ingredients for the Ragu:

  • 200 g of dried lentils (or about 400 g if pre-cooked)
  • 1 carrot, finely chopped
  • 1 onion, finely chopped
  • 1 stalk of celery, finely chopped
  • 2 cloves of garlic, chopped
  • 400 g of tomato puree or peeled tomatoes
  • 1 bay leaf
  • 1 sprig of rosemary (optional)
  • 1 glass of red wine (optional)
  • Extra virgin olive oil
  • Salt and pepper to taste

Ingredients for the Pasta:

  • 400 g of ziti or other long pasta

Preparation

  1. If using dried lentils, soak them in water for at least 8 hours, then drain and cook them in fresh water for about 20-30 minutes or until they are soft.

  2. Heat extra virgin olive oil in a large pot. Add the onion, carrot, celery, and garlic, and sauté until they soften.

  3. Add the cooked lentils to the pot along with the bay leaf and rosemary. Pour in the red wine, if using, and let the alcohol evaporate before adding the tomatoes.

  4. Bring to a boil, then lower the heat and let the ragu simmer for at least 30-40 minutes, until the sauce thickens. Season with salt and pepper.

  5. Meanwhile, cook the ziti in plenty of salted water following the package instructions.

  6. Drain the pasta and add it to the lentil ragu in the pot, mixing well to flavor the pasta.

  7. Serve the ziti with a sprinkle of grated Parmesan cheese or nutritional yeast for a vegan version.
