Yogurt Tart with Chocolate Shortcrust

Ingredients

  • 250 g of all-purpose flour
  • 150 g of cold butter, cubed
  • 100 g of powdered sugar
  • 30 g of unsweetened cocoa powder
  • 1 large egg
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract

For the yogurt cream:

  • 500 g of Greek yogurt
  • 60 g of powdered sugar (or another sweetener of choice)
  • 1 sachet of vanillin
  • Grated zest of 1 lemon (optional)
  • 2 tablespoons of lemon juice (optional)
  • Fresh fruit for garnish (strawberries, blueberries, raspberries, etc.)

Preparation

  1. To prepare the chocolate shortcrust pastry, sift the flour with cocoa powder into a large bowl and mix with a pinch of salt.
  2. Add the cold butter cubes and quickly work the mixture with your fingertips until you get a sandy consistency.
  3. Incorporate the powdered sugar, vanilla extract, and egg, and knead until a homogeneous ball is formed. If the mixture is too dry, add a tablespoon of cold water.
  4. Wrap the shortcrust in cling film and let it rest in the refrigerator for at least 30 minutes.
  5. Meanwhile, prepare the yogurt cream by mixing together the yogurt, powdered sugar, vanillin, lemon zest and juice (if using) until smooth and homogeneous. Store in the fridge to cool.
  6. Roll out the shortcrust on a floured surface until about 5 mm thick and line a previously buttered and floured tart pan.
  7. Prick the bottom of the shortcrust with the tines of a fork and bake it blind in a preheated oven at 180 °C for 15-20 minutes or until cooked through and slightly crispy.
  8. Remove the shortcrust base from the oven and let it cool completely.
  9. Once cold, fill the shortcrust base with the yogurt cream and level it well with a spatula or spoon.
  10. Decorate the top of the tart with fresh fruit as desired.
