- 100 g of powdered sugar
- 30 g of unsweetened cocoa powder
- 1 large egg
- 1 pinch of salt
- 1 teaspoon of vanilla extract
For the yogurt cream:
- 500 g of Greek yogurt
- 60 g of powdered sugar (or another sweetener of choice)
- 1 sachet of vanillin
- Grated zest of 1 lemon (optional)
- 2 tablespoons of lemon juice (optional)
- Fresh fruit for garnish (strawberries, blueberries, raspberries, etc.)
Preparation
- To prepare the chocolate shortcrust pastry, sift the flour with cocoa powder into a large bowl and mix with a pinch of salt.
- Add the cold butter cubes and quickly work the mixture with your fingertips until you get a sandy consistency.
- Incorporate the powdered sugar, vanilla extract, and egg, and knead until a homogeneous ball is formed. If the mixture is too dry, add a tablespoon of cold water.
- Wrap the shortcrust in cling film and let it rest in the refrigerator for at least 30 minutes.
- Meanwhile, prepare the yogurt cream by mixing together the yogurt, powdered sugar, vanillin, lemon zest and juice (if using) until smooth and homogeneous. Store in the fridge to cool.
- Roll out the shortcrust on a floured surface until about 5 mm thick and line a previously buttered and floured tart pan.
- Prick the bottom of the shortcrust with the tines of a fork and bake it blind in a preheated oven at 180 °C for 15-20 minutes or until cooked through and slightly crispy.
- Remove the shortcrust base from the oven and let it cool completely.
- Once cold, fill the shortcrust base with the yogurt cream and level it well with a spatula or spoon.
- Decorate the top of the tart with fresh fruit as desired.
The yogurt tart with chocolate shortcrust is ideal for a summer dessert or as an elegant snack. The crunchy base pairs perfectly with the freshness of the cream, and the fruit chosen for decoration not only adds a splash of color but also a pleasant and varied texture.
