Yogurt swirls with apricot jam are delicious and soft brioche spirals that encompass a sweet and fruity heart. Here’s the recipe for preparing them.

Ingredients

  • 500 g of type 00 flour
  • 150 g of sugar
  • 1 packet of dry yeast (or 25 g of fresh yeast)
  • 250 g of plain natural yogurt
  • 1 egg (plus 1 yolk for brushing)
  • 50 g of soft butter
  • 1 pinch of salt
  • Apricot jam
  • Powdered sugar for garnishing (optional)

Preparation

  1. In a large bowl, sift the flour and mix in the dry yeast (if you are using fresh yeast, dissolve it in a little warm milk). Add sugar, yogurt, egg, and start to knead. If you’re using a mixer, use the hook attachment for leavened doughs.

  2. Add the pinch of salt and work the dough until it becomes smooth and begins to get stringy. Then incorporate the soft butter in pieces, one piece at a time, waiting for the previous piece to be completely absorbed before adding the next one.

  3. Transfer the dough to a lightly floured surface and knead it for a few more minutes. Then, form a ball and let it rise in a bowl covered with a kitchen towel in a warm place away from drafts until it doubles in volume, about 1-2 hours.

  4. After rising, gently roll out the dough on a floured surface to form a rectangle about 1/2 cm thick.

  5. Spread a generous amount of apricot jam, leaving a free edge of about 1 cm.

  6. Roll the dough on the long side, gently, to form a log. Then cut the log into slices about 2 cm thick.

  7. Arrange the swirls on a baking tray lined with parchment paper, well spaced apart, and let them rise again for about 30 minutes. In the meantime, preheat the oven to 180 °C.

  8. Brush the surface of the swirls with a beaten egg yolk and bake in the oven for about 20 minutes or until golden brown.

  9. Once baked, let the swirls cool on a wire rack, and if you wish, dust with powdered sugar before serving.
