Yogurt Pudding

Yogurt pudding is a fresh and delicious dessert, perfect to conclude a meal or as a snack. Here’s how to prepare it.

Ingredients

  • 500 g of Greek yogurt or whole natural yogurt
  • 100 ml of milk
  • 80 g of sugar (or to taste)
  • 8 g of sheet gelatin (fish glue) or 2 g of agar agar if you prefer a vegetarian option
  • 1 vanilla pod or a teaspoon of vanilla extract

Preparation

  1. Start by placing the sheets of gelatin in a bowl with cold water to soften them, soaking for about 10 minutes. If using agar agar, follow the instructions on the package for hydration.
  2. Meanwhile, in a saucepan, heat the milk over medium heat without bringing it to a boil. If using the vanilla pod, slit it lengthwise and scrape the seeds into the milk to flavor it.
  3. Squeeze the gelatin sheets to remove excess water and add them to the hot milk, stirring until completely dissolved. If using agar agar, add it to the milk and let it boil for 2-3 minutes, stirring constantly.
  4. In a large bowl, mix the yogurt with the sugar and the vanilla extract (if using that instead of the pod).
  5. Add the hot milk with the dissolved gelatin to the bowl with the yogurt, mixing well to combine everything.
  6. Pour the mixture into pudding molds or into a single container, depending on your preference.
  7. Let cool to room temperature before transferring to the refrigerator for at least 4 hours, better if overnight, so the pudding sets completely.
  8. Before serving, unmold the puddings by briefly dipping the bottom of the molds in hot water and turning them upside down onto a plate.
