Yogurt Plumcake and Mini Plumcakes

Yogurt plumcakes are soft and light desserts, suitable for breakfast or a snack. Here’s a basic recipe, adaptable for a traditional-sized plumcake or for mini plumcakes.

Ingredients for a plumcake (or 6-8 mini plumcakes):

  • 250 g of all-purpose flour
  • 200 g of sugar
  • 125 g of plain natural yogurt (Greek or regular according to preference)
  • 3 eggs
  • 100 ml of seed oil (e.g., sunflower or corn)
  • Grated zest of 1 lemon (to give a fresh touch)
  • 1 packet of baking powder
  • A pinch of salt
  • (Optional) Chocolate chips or nuts to taste

Preparation

  1. Preheat the oven to 180°C (350°F) and butter and flour a plumcake mold, or prepare the molds for the mini plumcakes with the appropriate paper cups.
  2. In a large bowl, whisk the eggs with the sugar until you obtain a light and fluffy mixture.
  3. Add the yogurt and seed oil and gently mix to blend everything together.
  4. Add the grated lemon zest and a pinch of salt.
  5. Incorporate the sifted flour and baking powder, stirring with a spatula or wooden spoon to avoid lumps.
  6. If you wish to add chocolate chips or nuts, now is the time to gently fold them into the batter.
  7. Pour the batter into the plumcake mold or fill the mini plumcake cups to two-thirds of their height.
  8. Bake the plumcake for about 40-45 minutes, or the mini plumcakes for about 20-25 minutes, until they are golden, and a toothpick inserted into the center comes out clean.
  9. Take out of the oven and let cool before unmolding and serving.

The beauty of yogurt plumcakes is that they represent a blank canvas which you can customize as you like: you can add cocoa powder for a chocolate plumcake, or soluble coffee, vanilla, or fresh or dried berries for always new variations.

The term “plumcake” may seem misleading, since literally translated it means “plum cake”, but in Anglo-Saxon countries, it refers to various types of cakes similar to our plumcake, which do not necessarily contain plums. In the case of the typically Italian yogurt plumcake, the lemon zest provides that citrus note that beautifully contrasts with the simplicity of the cake’s base.
