Yogurt Pancakes

I can provide you with a simple recipe for yogurt pancakes, with an Italian style twist. These pancakes will be light and fluffy, perfect for breakfast or a snack.

Ingredients

  • 150g of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 pinch of salt
  • 2 tablespoons of granulated sugar
  • 1 egg
  • 130g of natural yogurt
  • 60ml of milk
  • 1 teaspoon of vanilla extract (optional)
  • Butter, for cooking the pancakes

Preparation

  1. In a large bowl, mix together the flour, baking powder, salt, and sugar.
  2. In another bowl, beat the egg and then add the yogurt, milk, and vanilla extract, mixing well until you have a smooth mixture.
  3. Pour the liquid ingredients into the dry ingredients and gently mix with a spatula or a spoon until you have a smooth but slightly lumpy batter.
  4. Heat a non-stick frying pan over medium heat and lightly grease it with a bit of butter.
  5. Pour a ladle of batter for each pancake into the hot pan and cook for about 2-3 minutes, or until you see bubbles forming on the surface.
  6. Flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until it is golden and fluffy.
  7. Serve the pancakes hot with a drizzle of honey, fresh fruit, or an additional spoonful of natural yogurt if desired.

Trivia
