Yogurt Pancakes

Ingredients
- 150g of all-purpose flour
- 2 teaspoons of baking powder
- 1 pinch of salt
- 2 tablespoons of granulated sugar
- 1 egg
- 130g of natural yogurt
- 60ml of milk
- 1 teaspoon of vanilla extract (optional)
- Butter, for cooking the pancakes
Preparation
- In a large bowl, mix together the flour, baking powder, salt, and sugar.
- In another bowl, beat the egg and then add the yogurt, milk, and vanilla extract, mixing well until you have a smooth mixture.
- Pour the liquid ingredients into the dry ingredients and gently mix with a spatula or a spoon until you have a smooth but slightly lumpy batter.
- Heat a non-stick frying pan over medium heat and lightly grease it with a bit of butter.
- Pour a ladle of batter for each pancake into the hot pan and cook for about 2-3 minutes, or until you see bubbles forming on the surface.
- Flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until it is golden and fluffy.
- Serve the pancakes hot with a drizzle of honey, fresh fruit, or an additional spoonful of natural yogurt if desired.
