Yogurt Muffins

Here’s a basic recipe for delicious yogurt muffins. You can customize it by adding fruit, chocolate chips, or flavors of your choice:

Ingredients

  • 250g of flour
  • 125g of sugar
  • 2 eggs
  • 125ml of seed oil
  • 125g of white yogurt (natural or vanilla flavored)
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Grated zest of lemon or vanilla, to flavor (optional)

Preparation

  1. Preheat the oven to 180°C and prepare a muffin pan by lining the cavities with paper liners, or by greasing and flouring them.
  2. In a bowl, sift the flour with the baking powder and a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  4. Gradually add the oil, continuing to stir, and then incorporate the yogurt.
  5. Combine the dry ingredient mixture with the wet mixture, adding grated lemon zest or vanilla if you wish to flavor your muffins. Mix until the batter is uniform, being careful not to overmix.
  6. Fill the muffin pan cavities about 2/3 full with the batter.
  7. Bake in the oven for about 20-25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
