Berry Yogurt Mousse

Here is the recipe for the Berry Yogurt Mousse, with an Italian touch in the flavor.

Ingredients

  • 250 grams of Greek yogurt or good quality yogurt
  • 200 grams of mixed berries (raspberries, blackberries, blueberries, wild strawberries)
  • 100 ml of fresh cream to whip
  • 70 grams of powdered sugar (or less, depending on your sweetness preference)
  • 2 sheets of gelatin (or agar agar if you prefer a vegetarian option)
  • 1 lemon (grated zest)
  • Fresh mint for garnish

Preparation

  1. Begin by soaking the gelatin sheets in a bowl of cold water for about 10 minutes, until they become soft.
  2. In the meantime, heat a small quantity of the berries in a saucepan with a spoon of powdered sugar, just enough time to dissolve the sugar and create a light syrupy mixture. Do not cook too long to preserve some of the freshness of the fruit.
  3. Squeeze out the softened gelatin and add it to the warm fruit mixture, stirring until completely dissolved.
  4. In a bowl, blend the yogurt with the grated lemon zest and the rest of the powdered sugar.
  5. Whip the fresh cream until it becomes stiff and gently fold it into the yogurt mixture.
  6. Add the berry and gelatin mixture to the rest and stir gently to create a marbled effect.
  7. Distribute the mousse into glasses or bowls and let it rest in the refrigerator for at least 3-4 hours, until the mousse sets.
  8. When serving, decorate with fresh berries and small mint leaves.

Curiosity

This mousse is perfect for a light dessert after a hearty meal. The yogurt and cream create a perfect balance between acidity and creaminess, while the berries add that touch of freshness and depth of flavor that elevate the dish. In Italy, we know how important it is to end the meal with something sweet but not too heavy, and this mousse is just right for us.
