Yogurt Cheesecake, Figs and Honey

The yogurt cheesecake with figs and honey is a delicious dessert that plays with Mediterranean flavors. It is a fresh and lighter version of the classic cheesecake. Here’s how to prepare it:

Ingredients

  • 200 g of digestive biscuits
  • 100 g of melted butter
  • 500 g of Greek yogurt
  • 100 g of powdered sugar
  • 10 g of fish glue (sheet gelatin)
  • 250 ml of fresh cream
  • Grated lemon zest (optional)
  • Fresh figs for decoration
  • Quality honey for garnishing

Preparation

  1. For the cheesecake base, finely chop the biscuits in a blender until reduced to a powder. Mix the crushed biscuits with the melted butter until you have a homogeneous mixture.
  2. Spread the biscuit mixture over the bottom of a springform pan (recommended diameter 22-24 cm), pressing down well with the back of a spoon to compact it. Place in the refrigerator to rest for at least 30 minutes.
  3. In the meantime, soak the fish glue in cold water for 10 minutes.
  4. In a large bowl, combine Greek yogurt and powdered sugar. Add the grated lemon zest if you wish for a citrusy touch.
  5. Squeeze out the softened fish glue, and dissolve it in a saucepan with a small amount of cream taken from the total, until it becomes liquid. Let it cool down a bit.
  6. Whip the remaining cream until it is firm.
  7. Add the dissolved fish glue to the yogurt mixture and mix gently.
  8. Fold the whipped cream into the yogurt and gelatin mixture, stirring from the bottom up to maintain a fluffy consistency.
  9. Pour the obtained cream over the biscuit base and level the surface. Place in the refrigerator for at least 4 hours, or better still, overnight.
  10. When ready to serve, cut the fresh figs into thin slices and arrange them decoratively on the surface of the cheesecake.
  11. Warm up a bit of honey to make it more liquid and pour it over the figs for a final sweet and sticky touch.

Once ready, you can leave the cheesecake in the refrigerator until it’s time to serve. The honey will not only add sweetness but will also create a pleasant contrast with the freshness of the yogurt and the unique flavor of the figs.
