Yogurt Ciambella

The yogurt ciambellone is a classic simple and soft cake, perfect for breakfast or a snack. Here’s how to prepare it.

Ingredients

  • 1 container of natural yogurt (125g, which can then be used as a unit of measure)
  • 3 containers of flour
  • 2 containers of sugar
  • 1 container of seed oil
  • 3 eggs
  • 1 packet of baking powder
  • A pinch of salt
  • Grated zest of 1 lemon (optional)
  • Icing sugar for decoration (optional)

Preparation

  1. Preheat the oven to 180°C (356°F) and grease a bundt cake pan with a little butter or oil and dust lightly with flour.
  2. In a large bowl, beat the eggs with the sugar until the mixture is frothy and light in color.
  3. Add the yogurt and continue mixing.
  4. Slowly pour in the container of oil, making sure to blend all the ingredients well.
  5. Fold in the sifted flour, the baking powder, and the pinch of salt. If desired, also add the grated lemon zest for a touch of freshness.
  6. Mix the batter until smooth and lump-free.
  7. Pour the mixture into the prepared pan and bake for about 35-40 minutes. To check if it’s ready, you can stick a toothpick in the center of the ciambella: if it comes out dry, it’s done.
  8. Let the ciambella cool in the pan for a few minutes, then turn it out onto a wire rack to cool completely.
  9. If you like, you can dust with icing sugar before serving.

Fun Fact

The yogurt ciambellone lends itself to many variations: you can add chocolate chips or nuts to the batter to enrich it, or replace some of the flour with cocoa to make a chocolate version. Also, the yogurt can be plain or flavored, for an extra note of flavor.
