Yogurt Biscuits

Yogurt biscuits are a delicious variation of the classic soft and light cookie. Here’s a simple recipe to make them.

Ingredients

  • 250 g of flour
  • 125 g of sugar
  • 80 g of soft butter
  • 1 egg
  • 125 g of white yogurt (preferably whole)
  • 1 teaspoon of baking powder
  • Grated zest of 1 lemon (for flavoring)
  • A pinch of salt

Preparation

  1. In a large bowl, mix the soft butter with the sugar until creamy.
  2. Add the egg and continue mixing to blend the ingredients well.
  3. Incorporate the yogurt and grated lemon zest into the mixture, mixing thoroughly.
  4. In another bowl, sift the flour with the baking powder and a pinch of salt.
  5. Combine the dry ingredients with the wet ones and work the dough until it is homogeneous. If it’s too sticky, you can add a bit of flour until you achieve the desired consistency.
  6. Take small portions of dough and form into small discs or balls that you will slightly flatten.
  7. Place the biscuits on a baking tray lined with parchment paper, leaving a little space between each one.
  8. Bake in a preheated oven at 180 °C for about 15-20 minutes, or until the edges start to turn golden.
  9. Remove the biscuits from the oven and let them cool on a rack before serving.

Curiosity

If you opt for Greek yogurt, you will get denser and richer biscuits, while if you choose a more liquid yogurt, the result will be fluffier and lighter biscuits. You can also customize this recipe by adding chocolate chips, chopped nuts, or other flavors to taste to give a unique touch to your biscuits.
