Butter-Free Yogurt Cake

The yogurt cake is a simple and light dessert that can be prepared without butter for a lighter variant. Here is how to make a butter-free yogurt cake:

Ingredients

  • 1 pot of yogurt (125 g, the pot will then serve as a measuring cup)
  • 3 pots of all-purpose flour
  • 2 pots of sugar
  • 1 pot of seed oil
  • 3 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Grated zest of 1 lemon (optional, for flavoring)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, whisk the eggs with the sugar until the mixture is frothy and light.
  3. Add the yogurt and mix well.
  4. Using the empty yogurt pot as a measuring cup, pour the seed oil into the mixture and stir.
  5. Gradually add the sifted flour with the baking powder and a pinch of salt, stirring to avoid lumps.
  6. If you wish to flavor the cake, add the grated lemon zest.
  7. Pour the mixture into a cake pan (preferably with a removable bottom) previously greased with a little oil or lined with parchment paper.
  8. Bake the cake for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool before unmolding.

Curiosity

This cake is particularly loved for its versatility. The flavor can be varied by using different types of yogurt or by adding fruits into small pieces, chocolate chips, or nuts to the batter. Being a butter-free cake, it is often preferred by those who follow a lighter diet but do not want to give up the pleasure of a sweet treat.
