Yogurt Brioche

Yogurt brioche is a soft and light sweet preparation, ideal for breakfast or a snack. Here is a simple recipe to make:

Ingredients

  • 150 g of natural yogurt (full-fat is better for a softer result)
  • 2 medium eggs
  • 100 ml of seed oil (such as sunflower or corn)
  • 200 g of sugar
  • 500 g of flour type 00
  • 1 packet of baking powder for sweets
  • 1 pinch of salt
  • Grated zest of 1 lemon or 1 orange (optional for a fresh touch)
  • Butter and flour for greasing and flouring the mold

Preparation

  1. In a large bowl, mix the yogurt with the eggs and seed oil until you obtain a homogeneous mixture.
  2. Add the sugar and the grated zest of the lemon or orange if you decide to use it, mixing well.
  3. Gradually incorporate the sifted flour with the baking powder and a pinch of salt, continuing to mix until the dough becomes smooth and free of lumps.
  4. Prepare a brioche mold (or a plumcake mold if you prefer), greasing it with butter and dusting it with a bit of flour.
  5. Pour the batter into the mold and level the surface with a spatula or the back of a spoon.
  6. Preheat the oven to 180 °C and, once hot, bake the brioche for about 30-40 minutes, until it becomes golden and a toothpick inserted in the center comes out clean.
  7. Take the brioche out of the oven and let it cool in the mold for a few minutes. Then, lift the brioche from the mold and transfer it to a wire rack to cool completely.
