Breaded Chicken Breast with Yogurt

The breaded chicken breast with yogurt is a delicious variation of the classic breaded recipe that uses yogurt to create a breadcrumb coating that is slightly moister and with a touch of acidity that goes well with chicken.

Ingredients

  • 4 chicken breasts
  • 200 g of natural yogurt
  • 150 g of breadcrumbs
  • Salt and pepper to taste
  • Aromatic herbs to taste (e.g., thyme, rosemary, oregano)
  • Extra virgin olive oil or other cooking oil

Preparation

  1. Prepare the chicken breasts: make sure they are clean, boneless, and skinless. If you wish, you can lightly pound them to thin out and make them more even.
  2. In a bowl, mix the natural yogurt with salt, pepper, and the chosen aromatic herbs. The amount of aromatic herbs depends on your taste, but a teaspoon of each dried herb is a good starting point.
  3. Pour the breadcrumbs onto a deep plate.
  4. Dip each chicken breast in the yogurt, making sure the seasoning adheres well on both sides.
  5. Transfer the chicken breast to the plate with the breadcrumbs and cover it completely with the breadcrumbs, pressing lightly to help the breading stick.
  6. Heat the oil in a wide frying pan over medium-high heat. When the oil is hot, add the breaded chicken breasts.
  7. Cook the chicken breasts for about 4-6 minutes per side, or until the breading is golden and crispy and the chicken is cooked internally (the internal temperature should be at least 75°C).
  8. Once cooked, transfer the chicken breasts onto a plate lined with paper towels to remove any excess oil.
  9. Serve hot, optionally accompanied by a fresh salad or steamed vegetables.
