Yogurt Bars

Yogurt bars are a delicious snack that is relatively simple to prepare at home.

Ingredients

  • 250 g of oat flakes
  • 125 g of honey
  • 2 tablespoons of coconut oil (or melted butter)
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 125 g of Greek yogurt (or another yogurt of your choice)
  • 1-2 tablespoons of jam, preferably with no added sugars
  • Fresh fruit of your choice (such as strawberries or blueberries)
  • Dried fruit, nuts, or seeds for added crunch (optional)

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  2. In a bowl, mix together the oat flakes, honey, coconut oil, vanilla extract, and a pinch of salt until you have a homogeneous mixture.
  3. Press half of this mixture into the tray to form an even layer, which will serve as the base for your bars.
  4. Bake in the oven for about 15 minutes, or until slightly golden.
  5. Once baked, let it cool for a few minutes, then spread a layer of yogurt over the oat base.
  6. Add a thin layer of jam over the yogurt and distribute the freshly cut fruit on top.
  7. Crumble the remaining oat mixture over the fruit, then sprinkle with dried fruit if you choose to use it.
  8. Put back in the oven for another 15-20 minutes or until golden.
  9. Allow to cool completely before cutting the bars.

I recommend letting them set in the refrigerator before serving, so they firm up better. These bars are versatile and can be personalized to taste: for example, for an even more Italian touch, you could use coffee-flavored yogurt or a layer of sweetened ricotta with a bit of sugar and grated lemon or orange zest.
