Yogurt and Fruit Popsicle

Here’s a simple recipe for making a yogurt and fruit popsicle, a fresh and healthy treat perfect for the warm season.

Ingredients

  • 500 g of Greek or whole yogurt
  • 3 tablespoons of honey (or another sweetener to taste)
  • 1 teaspoon of vanilla extract (optional)
  • Fresh fruit of choice (for example strawberries, blueberries, mango pieces, bananas, kiwi)
  • Wooden popsicle sticks

Preparation

  1. In a bowl, mix the yogurt with the honey and vanilla extract until smooth.
  2. Wash and chop the fruit into small pieces suitable for threading onto the sticks.
  3. Take some popsicle molds. If you don’t have the proper molds, you can also use paper cups or empty yogurt containers.
  4. Place some of the chopped fruit at the bottom of the molds.
  5. Pour the yogurt and honey mixture over the fruit until the mold is filled, leaving a small space from the edge to allow the popsicle to expand during freezing.
  6. Add more fruit pieces if desired, distributing them so they are visible when the popsicle is frozen for a more decorative effect.
  7. Insert a wooden stick into each mold, making sure it protrudes enough to be grabbed later.
  8. Put the molds in the freezer and leave them to freeze for at least 4-6 hours or until the popsicle is completely solid.
  9. Once the popsicle is frozen, remove the sticks from the molds. If you have difficulty, you can run the molds under warm water for a few seconds to help release the popsicle.
  10. Serve immediately or store the popsicles in a sealed container in the freezer to prevent them from absorbing odors.

The popsicle has origins that date back to the early 1900s, and it is said to have been invented accidentally by an American child named Frank Epperson, who left a mixture of sugared water with a stick outside on a cold night. Years later, Epperson patented the idea and started selling this cool treat under the name “Popsicle”. Today, the popsicle is popular in countless versions and flavors around the world.
