Yogurt and Chocolate Chip Muffins

Ingredients

  • 250 g of flour
  • 125 g of natural yogurt (both full-fat and low-fat are fine)
  • 100 g of sugar

  • 1 sachet of baking powder
  • 1 pinch of salt
  • 100 g of chocolate chips

Preparation

  1. Preheat the oven to 180°C (static) or 160°C (convection).
  2. In a bowl, whisk the eggs with the sugar until the mixture is light and fluffy.
  3. Add the yogurt and oil, continue stirring.
  4. Incorporate the sifted flour with the baking powder, the pinch of salt, and the vanilla, mix until you have a smooth batter.
  5. Finally, add the chocolate chips and gently fold them into the batter.
  6. Prepare a muffin tin with paper liners, and pour the batter into the liners, filling each up to 3/4.
  7. Bake for about 20-25 minutes or until the muffins are golden brown and a skewer inserted comes out clean.
