Yogurt and Berries Muffins

Here is the recipe to prepare delicious yogurt and berries muffins with an Italian touch by adding a bit of lemon zest to enhance the flavors.

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 125 g of white yogurt (full-fat is better)
  • 100 g of berries (fresh or frozen)
  • 80 ml of seed oil
  • 2 eggs
  • Grated zest of 1 lemon (to add an Italian touch)
  • 1 sachet of baking powder (about 16g)
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the flour with the sugar, baking powder, and a pinch of salt.
  3. In another bowl, whisk the eggs with a hand whisk or an electric mixer until they become frothy.
  4. Add the grated lemon zest to the yogurt, then mix in the oil and continue to stir to blend the ingredients well.
  5. Add the mixture of liquid ingredients to the dry ingredients and mix with a spatula or a wooden spoon until the batter is uniform.
  6. Fold the berries into the batter, taking care not to break them. If you are using frozen berries, there is no need to thaw them before adding to the batter.
  7. Distribute the batter into muffin cups, filling them about 2/3 full.
  8. Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove the muffins from the oven and allow them to cool on a wire rack before serving.
