Yogurt and Apple Muffins

Yogurt and apple muffins are a tasty snack or a pleasant dessert and are simple to prepare. Here is the recipe for you:

Ingredients

  • 250 g of all-purpose flour
  • 2 apples (preferably golden or rennet variety)
  • 150 g of sugar
  • 125 g of natural white yogurt
  • 2 eggs
  • 80 ml of vegetable oil
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of ground cinnamon (optional)
  • Icing sugar (for decorating, optional)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin pan by lining the holes with paper liners.
  2. In a bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  3. Add the yogurt and vegetable oil to the egg and sugar mixture, mixing gently.
  4. Peel the apples, remove the cores, and cut them into small cubes.
  5. In a separate bowl, sift the flour with the baking powder, cinnamon (if you decide to use it), and a pinch of salt.
  6. Combine the dry ingredients with the wet mixture and fold gently, taking care not to overmix the batter.
  7. Add the apple cubes and mix carefully to distribute them evenly throughout the batter.
  8. Fill the paper liners with the batter, not exceeding 2/3 of their capacity.
  9. Bake the muffins for about 20-25 minutes, or until they are golden brown, and a toothpick inserted in the center of a muffin comes out clean.
  10. Let the muffins cool before dusting them with icing sugar if you wish.
