Yogurt and Apple Muffins
17/11/2023Yogurt and apple muffins are a tasty snack or a pleasant dessert and are simple to prepare. Here is the recipe for you:
Ingredients
- 250 g of all-purpose flour
- 2 apples (preferably golden or rennet variety)
- 150 g of sugar
- 125 g of natural white yogurt
- 2 eggs
- 80 ml of vegetable oil
- 1 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of ground cinnamon (optional)
- Icing sugar (for decorating, optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin pan by lining the holes with paper liners.
- In a bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
- Add the yogurt and vegetable oil to the egg and sugar mixture, mixing gently.
- Peel the apples, remove the cores, and cut them into small cubes.
- In a separate bowl, sift the flour with the baking powder, cinnamon (if you decide to use it), and a pinch of salt.
- Combine the dry ingredients with the wet mixture and fold gently, taking care not to overmix the batter.
- Add the apple cubes and mix carefully to distribute them evenly throughout the batter.
- Fill the paper liners with the batter, not exceeding 2/3 of their capacity.
- Bake the muffins for about 20-25 minutes, or until they are golden brown, and a toothpick inserted in the center of a muffin comes out clean.
- Let the muffins cool before dusting them with icing sugar if you wish.
These muffins are ideal for a nutritious breakfast or a delicious snack. Here’s a little trivia: the apples, in addition to adding a pleasant sweet-tart flavor, also give moisture to the dessert, making the muffins soft and delicious even the next day!
