Yeast-free Pumpkin Fritters

Pumpkin fritters are a simple and tasty dish, perfect for autumn, but that can be made at any time of the year. Here’s how to prepare yeast-free pumpkin fritters for a still pleasantly soft and flavorful result.

Ingredients

  • 300 g of cleaned pumpkin
  • 2 eggs
  • 120 g of all-purpose flour
  • 40 g of grated Parmesan cheese
  • Salt to taste
  • Nutmeg to taste
  • Oil for frying

Preparation

  1. Start by preparing the pumpkin: cut it into pieces and cook it so that it can be easily mashed. You can steam it, bake it in the oven, or boil it in lightly salted water until it is tender.

  2. Once cooked, drain the pumpkin well to prevent it from releasing too much water into the fritters, then mash it with a potato masher or blend it to obtain a puree.

  3. In a bowl, mix the pumpkin puree with the eggs, grated Parmesan cheese, a pinch of salt, and a bit of grated nutmeg for flavor.

  4. Gradually add the flour, stirring well to avoid the formation of lumps. You should get a smooth and fairly thick mixture.

  5. Heat plenty of oil in a pan and, when it has reached the right temperature, use two spoons to scoop portions of the batter and pour them into the hot oil.

  6. Fry the fritters until they are golden and crispy, turning them halfway through cooking to ensure they brown evenly.

  7. Once ready, remove them from the oil with a slotted spoon and let them drain on kitchen paper to remove excess oil.

  8. Your yeast-free pumpkin fritters are ready to be served! Ideal as an appetizer or as a unique side dish.
