Savory Boscaiola Muffins

The savory boscaiola muffins are a delicious variation on the classic pasta alla boscaiola dish. Here’s a recipe you can follow to make them:

Ingredients

  • 250 g of flour
  • 2 eggs
  • 100 ml of milk
  • 80 ml of seed oil
  • 100 g of mushrooms (champignons or porcini, depending on availability)
  • 150 g of sausage (or pancetta, if you prefer)
  • 1 tablespoon of chopped parsley
  • 80 g of peas (optional)
  • 100 g of grated Parmesan cheese
  • 1 packet of baking powder for savory cakes
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin pan by lining the cavities with paper cups or by greasing and flouring them.
  2. Clean the mushrooms carefully with a damp cloth and cut them into small pieces. If you’re using sausage, peel it and crumble it.
  3. In a frying pan, heat a bit of oil and sauté the mushrooms along with the sausage until they are well browned. If you choose to use peas, add them towards the end of cooking.
  4. In a bowl, mix the flour with the baking powder, a pinch of salt, and a bit of pepper.
  5. In another bowl, whisk the eggs with the oil and milk, then add the grated Parmesan cheese and the chopped parsley.
  6. Combine the wet ingredients with the dry, mixing with a spatella until you get a smooth mixture.
  7. Add the mushrooms and sausage (and peas if you’re using them) to the mixture, mixing well.
  8. Fill the muffin pan cavities with the mixture, not exceeding 3/4 of their height.
  9. Bake the muffins for about 20-25 minutes, or until they are golden brown and well risen.
  10. Do the toothpick test to make sure they are baked in the center, then take them out of the oven and let them cool before serving.
