Winter Vegetable Parmigiana

Ingredients
- 2 medium potatoes
- 1 small butternut squash (about 500 g after cleaning)
- 1 medium Roman cabbage (Savoy cabbage)
- 300 g of fresh spinach
- 200 g of smoked scamorza cheese, sliced
- 100 g of grated Parmesan cheese
- 500 ml of tomato puree
- 2 cloves of garlic
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Fresh basil to taste (optional)
- Nutmeg (optional)

Start by preparing the vegetables: peel the potatoes and butternut squash and slice them into thin slices, better if using a mandoline. Clean the Roman cabbage well, remove the outer and tougher leaves and then finely slice it. Wash the spinach.

Season the slices of squash and potatoes with oil, salt, pepper, and a pinch of nutmeg to taste, then grill or bake in the oven until they become slightly soft.

Prepare a simple sauce by sautéing the garlic cloves in oil and then adding the tomato puree. Add salt, pepper, and, if desired, fresh basil. Cook for about 15-20 minutes on medium-low heat.

In a large pan with a drizzle of oil, briefly cook the Roman cabbage and spinach, just long enough for them to wilt. Drain well the cooking water.

To assemble the parmigiana, grease a baking dish with a drizzle of oil and lay down a first layer of potatoes. Then continue with a layer of squash, one of Roman cabbage and spinach, the sliced scamorza, and sprinkle with Parmesan. Add some tomato sauce.

Repeat the steps for layering until all ingredients are used up, finishing with a layer of scamorza and a lot of Parmesan.

Bake in a preheated oven at 180 °C for about 40-50 minutes or until the surface is golden and crispy.

Let rest for 10 minutes before serving.
