Berry Tiramisu

The Berry Tiramisu is a twist on the classic Italian dessert combining the creaminess of mascarpone with the sweetness of berries. It’s a fresh and colorful dessert, perfect for summer or for those who prefer a touch of tartness instead of coffee. Here’s the recipe:

Ingredients

  • 250 g of mascarpone
  • 100 g of powdered sugar
  • 3 eggs (with yolks separated from the whites)
  • 300 g of mixed berries (e.g., strawberries, blueberries, raspberries, blackberries)
  • 200 g of ladyfingers or pavesini
  • Berry juice or liqueur of choice for soaking the biscuits
  • Granulated sugar (optional, to sweeten the juice or liqueur)
  • Berries for garnish
  • Fresh mint for garnish (optional)
  • Unsweetened cocoa powder for dusting (optional)

Preparation

  1. Start by separating the yolks from the whites of the eggs.
  2. Beat the yolks with powdered sugar until you get a light and fluffy cream.
  3. Add the mascarpone to the beaten yolks and gently mix until you have a smooth cream.
  4. In another bowl, beat the egg whites until they form stiff peaks. If you like, you can add a pinch of salt to make it easier to whip.
  5. Fold the whipped egg whites into the mascarpone cream very gently with a spatula, using bottom to top movements so as not to deflate the mixture.
  6. In a dish or individual glasses, begin to assemble your Tiramisu by laying down a layer of ladyfingers previously soaked in berry juice or the chosen liqueur. If the liqueur or juice is too tart, you can sweeten it with a bit of granulated sugar.
  7. Spread a layer of mascarpone cream on top of the biscuits, then a layer of fresh berries.
  8. Continue with another layer of soaked ladyfingers and then the cream and berries again, until you have used up all the ingredients.
  9. Finish with a layer of cream and decorate with fresh berries and, if you like, you can dust with a little unsweetened cocoa powder.
  10. Let the Tiramisu rest in the refrigerator for at least 3-4 hours before serving to allow the flavors to meld and the cream to firm up.

Garnish with fresh mint leaves just before serving for a touch of color and freshness.
