Ingredients
- 200 g of whole wheat flour
- 2 eggs
- 80 g of acacia honey or honey of your choice
- 2 medium-sized apples
- 50 ml of extra virgin olive oil or seed oil
- 1 packet of baking powder for cakes (about 16g)
- A handful of raisins (optional)
- 1 pinch of salt
- 1 teaspoon of ground cinnamon (optional)
- Powdered sugar for garnishing (optional)
Preparation
- Start by preheating the oven to 180 °C.
- In a large bowl, beat the eggs with the honey until you have a smooth mixture.
- Add the olive oil and continue stirring.
- Incorporate the sifted whole wheat flour with baking powder, salt, and if you like, cinnamon. Mix well to avoid lumps.
- Peel and cut the apples into small cubes or thin slices, depending on your preference.
- Add the apple pieces (and raisins if using) to the batter and gently stir to distribute them evenly.
- Pour the mixture into a previously buttered cake pan or lined with parchment paper.
- Bake for about 35-40 minutes or until the toothpick test is passed: when inserted into the center of the cake, it should come out clean.
- Let the cake cool in the turned off open door oven, then unmold it onto a serving plate.
- If you wish, dust with powdered sugar before serving.
