Ingredients
- 200 g of whole wheat flour
- 100 g of all-purpose flour
- 200 g of brown sugar
- 125 g of coconut yogurt
- 60 g of coconut oil (or vegetable oil)
- 100 ml of coconut milk (or regular milk)
- 3 eggs
- 100 g of dark chocolate, chopped or in chips
- 1 packet of baking powder
- 1 pinch of salt
- 60 g of desiccated coconut
- Zest of 1 lemon (optional, for a citrusy touch)
Preparation
- Preheat the oven to 180 °C (356 °F) and grease a doughnut pan with some coconut oil or butter then lightly flour it.
- In a bowl, mix the flours with the baking powder, salt, and desiccated coconut.
- In another bowl, beat the eggs with the brown sugar until frothy.
- Add the coconut yogurt, coconut milk, coconut oil, and if desired, the grated lemon zest to the sugar and eggs. Mix well to blend all the ingredients.
- Fold the flour mixture into the liquid ingredients, mixing gently to avoid lumps.
- Add the dark chocolate pieces or chips and mix carefully.
- Pour the mixture into the pan and bake for about 40-45 minutes; always do the toothpick test before removing it from the oven.
- Once baked, let the doughnut cool in the mold for about 10 minutes, then transfer it to a wire rack to cool completely.
