Whole Wheat Tart

The whole wheat tart is a more rustic and slightly more nutritious variant of the classic tart, thanks to the use of whole wheat flour. Here is the recipe for a whole wheat tart with jam.

Ingredients

  • 200 g of whole wheat flour
  • 100 g of cold butter, cubed
  • 80 g of brown sugar
  • 1 egg
  • 1 pinch of salt
  • Grated zest of 1 lemon (optional)
  • Jam (any fruit of your choice) for the filling, about 300 g

Preparation

  1. In a large bowl, mix the whole wheat flour with the brown sugar and the pinch of salt.
  2. Add the cold, cubed butter and work the mixture with your fingertips until it has a sandy appearance.
  3. Make a well in the center and add the egg (and lemon zest if you choose to use it), then quickly knead until it forms a ball.
  4. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  5. Afterwards, roll out the dough with a rolling pin on a lightly floured surface to form a disk that can cover the bottom and sides of a tart pan.
  6. Lightly butter and flour the pan, lay the dough disc inside and prick the bottom with the tines of a fork.
  7. Pour the jam over the base of the tart and, if you like, you can create strips of dough with the leftovers to make the classic lattice top over the jam.
  8. Bake in a preheated oven at 180 °C for about 30 minutes or until the surface is golden brown.
  9. Allow to cool before serving.
