Ingredients

  • 320 g of whole wheat conchiglie
  • 2-3 medium zucchini
  • 1 clove of garlic
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of curry powder

  • Grated Parmesan cheese (optional)

Preparation

  1. Start by boiling plenty of water in a pot to cook the pasta. Once the water comes to a boil, add salt and insert the whole wheat conchiglie. Cook following the time indicated on the package, so that it is al dente.

  2. In the meantime, wash and cut the zucchini into rounds or cubes, as you prefer.

  3. Take a frying pan and gently sauté the garlic clove in the extra virgin olive oil. If you like a spicy touch, you can also add some chili pepper.

  4. Remove the garlic and add the zucchini to the pan. Let them cook over medium heat for about 5-8 minutes until they are slightly browned and soft.

  5. Sprinkle the teaspoon of curry onto the zucchini and mix well, letting the spices toast for a minute to enhance their flavor.

  6. When the pasta is cooked, drain it while saving some of the cooking water. Add the whole wheat conchiglie to the pan with the zucchini and mix well to coat the pasta with the curry and zucchini sauce. If necessary, add a little cooking water to make the sauce creamier.

  7. Adjust salt and pepper to your liking and, if you wish, you can finish with some grated Parmesan cheese before serving.
