Whole Wheat Gnocchetti with Chickpeas and Tuna
17/11/2023I can suggest a recipe for preparing whole wheat gnocchetti with chickpeas and tuna. This dish will be rich in flavors, blending the rusticity of whole wheat gnocchetti and the sweetness of chickpeas with the strong flavor of tuna.
Ingredients
- 250 g of whole wheat gnocchetti
- 200 g of oil-packed tuna, drained
- 240 g (1 can) of chickpeas, drained and rinsed
- 2 cloves of garlic
- 4 tablespoons of extra virgin olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley to taste (optional for garnishing)
- 1 chili pepper (optional)
Preparation
-
Bring a pot of salted water to a boil and cook the whole wheat gnocchetti according to the cooking times given on the package.
-
Meanwhile, in a large pan, heat 2 tablespoons of extra virgin olive oil and add peeled and crushed garlic cloves. If you like a bit of spice, also add chopped chili pepper. Brown the garlic over medium-low heat.
-
Add the chickpeas to the pan and cook for about 5 minutes, then add the drained tuna. Break the tuna into smaller pieces with a fork and stir well to blend the flavors together.
-
Once the gnocchetti are cooked, drain them and pour into the pan with the chickpeas and tuna. Raise the heat and toss everything together for a couple of minutes. If necessary, add a little gnocchetti cooking water to make the sauce creamier.
-
Taste and adjust for salt and pepper according to your preference.
-
Dish the gnocchetti and sprinkle with chopped fresh parsley, if you wish, to add a touch of freshness and color to the dish.
-
Serve hot and enjoy your balanced and nutritious dish.
Curiosity
Whole wheat gnocchetti are a great source of fiber and are perfectly suited for rustic dishes like this one. Paired with chickpeas, they increase their protein value, making this dish a valid proposal for a complete meal, especially for those following a Mediterranean diet. Tuna, rich in Omega-3, adds a note of flavor and contributes to the intake of high-quality protein.
