Whole wheat honey croissants

Whole wheat honey croissants are a healthier alternative to traditional croissants. Here’s the recipe with ingredients and instructions.

Ingredients

  • 500 g of whole wheat flour
  • 250 ml of lukewarm milk
  • 70 g of honey
  • 1 egg (plus one more for brushing)
  • 100 g of soft butter
  • 12 g of fresh yeast or 4 g of dry yeast
  • A pinch of salt
  • Cane sugar or granulated sugar (for sprinkling)

Preparation

  1. Dissolve the yeast in the lukewarm milk and add the honey to allow it to activate.
  2. In a large bowl, mix the whole wheat flour with the pinch of salt.
  3. Create a well in the center of the flour and pour the milk, honey, and yeast mixture into it, stirring gently with a fork.
  4. Add the egg and continue stirring until you start to form a dough.
  5. Incorporate the soft butter pieces, working the dough until smooth and even. If necessary, add a little whole wheat flour.
  6. Cover the dough with a clean cloth and let it rise in a warm place for about 2 hours or until it doubles in volume.
  7. Once the dough has risen, roll it out on a lightly floured surface to form a rectangle about 5 mm thick.
  8. Cut the rectangle into isosceles triangles and roll each triangle onto itself starting from the wider base to form the croissants.
  9. Place the croissants on a baking sheet lined with parchment paper, cover with a cloth, and let them rise for about 30 minutes.
  10. Beat the remaining egg and brush the surface of the croissants, then sprinkle with some cane sugar or granulated sugar.
  11. Bake at 180 °C for about 15-20 minutes or until they are golden brown.
  12. Remove the whole wheat honey croissants from the oven and let them cool on a rack.
