Wholemeal Berry Muffins

I can provide you the recipe for delicious wholemeal berry muffins. These treats are perfect for a healthy breakfast or a nutritious snack. Here is the recipe:

Ingredients

  • 200 g of wholemeal flour
  • 50 g of brown sugar (or other sweetener of your choice)
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 2 eggs
  • 100 ml of milk (you can use cow’s milk or a plant-based drink of your choice)
  • 80 ml of seed oil (or coconut oil if you prefer)
  • 1 teaspoon of vanilla extract
  • 200 g of berries (fresh or frozen)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the baskets with paper cups.
  2. In a bowl, mix the wholemeal flour, brown sugar, baking powder, and pinch of salt.
  3. In a second bowl, beat the eggs and then add the milk, oil, and vanilla extract. Mix well to obtain a smooth mixture.
  4. Combine the liquid ingredients with the dry ones and gently mix until you have a lump-free batter, but be careful not to over-mix to keep the muffins soft.
  5. Gently fold the berries into the batter, trying to distribute them as evenly as possible.
  6. Fill each cup with the mixture, taking care not to exceed 3/4 of their capacity to prevent them from spilling over during cooking.
  7. Bake in the preheated oven for about 20-25 minutes or until they are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to complete the cooling.
