Ingredients
- 320 g of whole wheat spaghetti
- 2 red bell peppers
- 100 g of feta cheese
- 70 g of arugula
- 2 cloves of garlic
- 4 tablespoons of extra virgin olive oil
- Salt to taste
- Black pepper to taste
- (Optional) a pinch of red pepper flakes
Preparation
- Begin by washing and drying the red peppers. Then roast them in the oven until the skin starts to turn black and blister. This process usually takes about 30 minutes at 200 °C, but may vary depending on your oven. Once roasted, place them in a sealed container or plastic bag for a few minutes: this facilitates the peeling.
- In the meantime, bring a pot of salted water to a boil and cook the whole wheat spaghetti according to the package instructions for the desired consistency (al dente is preferable).
- Peel the roasted peppers, remove seeds and internal membranes, and cut them into strips.
- In a large enough skillet, sauté the garlic cloves in extra virgin olive oil. If you like a spicy touch, you can add red pepper flakes at this stage.
- Remove the garlic once golden and add the sliced peppers. Sauté them in the pan for a couple of minutes to flavor with the oil and garlic.
- Drain the spaghetti and add it to the pan with the peppers, tossing to blend the flavors.
- Remove the skillet from the heat and add the fresh arugula and crumbled feta cheese. Gently mix to distribute all the ingredients.
- Season with salt and pepper to taste, and serve immediately.
