Whole Wheat Spaghetti with Avocado Cream and Crispy Chickpeas

Whole wheat spaghetti with avocado cream and crispy chickpeas is a delicious and nutritious dish. Here’s a recipe you could follow, with an Italian twist:

Ingredients

  • 200 g of whole wheat spaghetti
  • 1 ripe avocado
  • 1 clove of garlic
  • Juice of half a lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 200 g of cooked chickpeas
  • Paprika, rosemary or other herbs to taste for the chickpeas
  • A pinch of chili pepper (optional)

Preparation

  1. Start by preheating the oven to 200 °C on convection mode to prepare the crispy chickpeas.
  2. Rinse and dry the chickpeas well, then season them with a drizzle of oil, salt, pepper, paprika, and aromatic herbs of your choice. Spread them on a baking tray lined with parchment paper and bake for about 20-30 minutes or until they are golden and crispy.
  3. While the chickpeas are in the oven, bring a pot of salted water to a boil and cook the whole wheat spaghetti following the instructions on the package for an al dente result.
  4. Prepare the avocado cream by blending the avocado pulp, garlic, lemon juice, extra virgin olive oil, salt, and pepper in a mixer until creamy. If you like, you can add a pinch of chili pepper for a spicy kick.
  5. Once cooked, drain the spaghetti and reserve some of the cooking water. Put the spaghetti back in the pot and add the avocado cream, mixing well to combine everything. If necessary, add a little of the reserved cooking water to make the sauce more fluid.
  6. Serve the spaghetti with the crispy chickpeas fresh out of the oven, sprinkling with additional pepper or aromatic herbs if desired.
