Whole wheat pizza

Ingredients

  • 500 g of whole wheat flour
  • 25 g of fresh brewer’s yeast or 7 g of dry brewer’s yeast
  • 300 ml of lukewarm water
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of salt
  • Tomato sauce to taste
  • Mozzarella to taste (or a vegan alternative if you want a dairy-free version)
  • Fresh basil for garnish
  • Any other topping you prefer (olives, mushrooms, vegetables, salami, etc.)

Preparation

  1. Dissolve the yeast in a bowl with the lukewarm water and let it rest for about 10 minutes until it starts to form bubbles.
  2. In a large bowl, place the flour and make a well in the center where you will pour the dissolved yeast water. Add the oil and salt around the edges of the flour.
  3. Begin kneading from the center, gradually incorporating the flour from the edges until you have a homogeneous mixture.
  4. Transfer the dough to a floured surface and continue kneading for about 10 minutes until it becomes smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 2 hours, or until it doubles in size.
  6. After rising, take the dough, give it a brief knead to deflate it, and divide it into balls according to the number of pizzas you wish to make.
  7. Roll out each ball of dough on a floured surface, creating a disk about 0.5 cm thick.
  8. Place the dough disks on baking sheets lined with parchment paper, add the tomato sauce, mozzarella, and other ingredients you have chosen.
  9. Bake in a preheated oven at 220ºC for about 15-20 minutes or until the crust is golden and crispy.
  10. Remove the pizzas from the oven and garnish with fresh basil leaves before serving.

Trivia

Whole wheat flour is different from white flour because it still contains the bran and germ of the wheat, parts that are removed during the milling process to obtain refined white flour. This not only gives the pizza a more rustic flavor but also a higher nutrient content such as dietary fibers and B vitamins.
